Aunt Mary's Celebrated Uncooked Date Chutney
Everyone in my family makes this; it keeps for ever and matures with age.
500g of stoned dates
125 g of sultanas or raisins
1 small onion, chopped
125g of brown sugar
300ml of vinegar
1 teaspoon of salt
1 clove of garlic, squashed
1 teaspoon of ground ginger plus other sweet spices to taste
Use the blocks of dried dates if you possibly can.
Check the dates carefully for stones. Soak thej dates in the vinegar overnight. Put the dates, vinegar and all other ingredients in a food processor/blender and blitz until you reach your desired texture; smooth and slightly coarse both work well. Pot in clean jars the following day. Experiment with different types of brown sugar, vinegar (I prefer wine vinegar) and sweet spices.
